
This is the more prestigious Spanish variety, also known in other regions as cencibel. This variety has a good adaptation to different soils at relatively high altitudes. Its name is the diminutive of the Spanish word temprano which means “early”, a reference to its early ripening compared to the rest of red grapes.
It clusters in compact bunches of medium size, and its berry, also of medium proportions, has a bluish black colouring. These characteristics give rise to full-bodied wines with an intense colour.
The wines from this variety enjoy a fully recognised quality, with a light strawberry and wild berry flavour and an intense ruby colouring. The wines made with either pure Tempranillo grape or blended with other grape varieties are distinguished from others by its balance.

This is a variety of red grape whose exact origin is unknown. The source of the first stocks has been attributed to Persia, Gaul and Italy.
In Spain it is spread all over every wine-growing area, although its first plantings were done in Valencia and some areas of Castile-La Mancha.
This grape variety has adapted itself perfectly to Castile-La Mancha conditions, especially because of its need for high temperatures and plenty of sunshine .
The wines made from this variety are considered to be gems within the wine market given the low output numbers obtained from its production.
Although it is usually blended with other grape varieties such as Grenache, Tempranillo, Cabernet or Merlot, Bodegas Fernando Castro produces varietal wines, such as Raíces Syrah, a tasty wine, with deep wild berries aroma. It is a perfect match for hard cheeses, pasta with red sauces or roasted and stewed meat. A real gem for good wine lovers.
This variety finds its origin in the Bordeaux region of France and is one of the world’s most spread out red grape variety, especially in mild and warm areas. Consequently, it adapts very well to dry or well-ventilated areas, as well as to light soils, though it does not adapt very well to excessively fertile and wet soils.
There are a lot of variations of Cabernet but in fact they are quite homogeneous, except for some differences in the shape of its bunches. Its tannins are dense and aristocratic, with complex fruity aromas, its germination is medium-late and it has medium-short internodes.
At first sight, Cabernet grape has an intense and covered colour, but, once opened, it shows a wide range of floral, fruity and vegetable aromas. Its berries are small and spherical, with a thick skin, firm pulp and astringent flavour.
Although there are a lot of wines made with Cabernet and blended with other varieties, we can improve its own organoleptic characteristics by maturing it in oak, so that it develops a very particular excellence. The wines made by Bodegas Fernando Castro from this type of grape have an intense red colour, are full-bodied and very aromatic.

The Merlot grape, like the Cabernet, originated in the Bordeaux region of France, even though its first crops came from the north of Italy. Its name comes from the French word merle which means blackbird, referring to the colour of the berry.
It is one of the world’s most widely spread out red grape variety, especially because of its functional qualities: softening and balancing other varieties.
The taste of the Merlot wine is fine and mild, without losing its aroma and meatiness. Its colour is an intense ruby and it has a medium alcoholic strength. Merlot wine matures quickly without losing any of its quality.

The most well-known white variety from La Mancha and also one of the world’s most well-known because of its resistance to drought and disease. In the olden days it was used for blends and distillations, but currently, thanks to our new wine-making systems, the Airén grape produces wines of excellent quality with fantastic aromas and flavours.
The Airén stocks have a hard and prolix character, and mature late so they can avoid the late frosts. The bunches and the berries of the Airén grape are big and have a honey shade.
Wines made with this grape are frank, full-bodied and have yellowish and sometimes lightly greenish colours. The flavour is soft and fresh and is ever appreciated by the lovers of good wine.

Chardonnay grape variety is one of the world’s most expanded white grapes, especially in the new wine-making areas (Australia, California, Argentina, Chile and South Africa.)
Although we already have the white Airén variety in Spain, Chardonnay has crossed our borders with all its might and has become a part of the Spanish wine industry.
The Chardonnay grape has small round berries and takes on a honey tone when ripened. It produces a soft and aromatic must, known as frutoso in Oenology slang.
